Only high-quality pork legs are used in the production of our South Tyrolean speck. They are rubbed with a mild salt and spice mixture and then cured in a dedicated curing room for 14 days. Afterward, the speck is smoked over beechwood and aged in our climate-controlled rooms for at least 7 months.

It is lightly cold-smoked using selected woods, followed by slow drying in the fresh mountain air of South Tyrol.
